STORY

I am a Chef by trade and a graduate of Sullivan University with a degree in Culinary Arts. Over the last seven years I have been learning all that I can about traditional BBQ’ing. I have created my own BBQ sauces and BBQ Rub. I have also designed and built my own BBQ Pitts.

In finding my niche with BBQ and the explosion of food trucks and mobile catering I strongly believe that now is the time to introduce Louisville to a familiar but new concept of BBQ. Utilizing local and sustainable products when possible to create a marketable product at an affordable price.

Since

2004

While in California, back in 2004, I was short on money and needed to get back to Ohio for the birth of my son. A friend of mine’s father has a BBQ smoker that was just sitting. I worked out a deal with his father and set up at a local grocery store one weekend and made a little over $400.00. I did this for two week ends and made enough money to get home. During this time is when the “BBQ Bug” bit me. Once I returned home I found no “real” BBQ in Central Ohio. Yes there is what we call BBQ cooked in the oven and coated with some sort of sauce and we call it BBQ. What I wanted was that old and traditional BBQ. Smoked for long hours over hickory wood.  The smoke permeating the meat giving it its unique flavor. The kind of BBQ you could only get at one of those old shacks on the side of the road somewhere in the south.
